The language settings are taken over from your phone. I suspect that if the phone is set to a language that Innovv has not incorporated into the app, the app will be set to Chinese.
Try setting your phone in English and then see what happens to the language in the Innovv app.
GPS? Interesting because the color of the LED for GPS is white (iirc). The manual that came with the kit isn't very descriptive. I'll have to search around more, maybe I missed it when I glossed over the doc. Is this something I need to fix with remote? Just weird they didn't localize that notification.
And where do you see that the color of the GPS is white? In the app during the live view? Or the GPS data that can be displayed as text in the video? Or do you mean the LED on the remote control.

Not sure, but would firmware upgrade fix this? I haven't checked the firmware version compared to what's available.
