You are right. Seems that they fixed the misbehaviour I mentioned above in the V57 firmware.

There is no way for users to disable a camera by app. Though you can use http comands to change the resolution to something the app does not support and "disable" the rear cam, this setting is not persistent since V57. On next reboot, the K2 will go back to default 1080p for both cams.
Is there any way to confirm Front cam will default to 1080 when Rear cam is unplugged?
You can use a http command to check the current resolution settings.

I'm guessing the nil for resolution refers to the back camera and would be normal to see when I go into settings, without a back camera installed?
Yes and no (in german: jein). The "nil" appears if the K2 is set to a resolution for which the App has no entry. In your case you started the K2 without the rear cam connected. In that case the K2 switches to a resolution setting which disables the rear cam. Something like "1080p, front cam only".
The App does not know this setting and shows "nil".
It is a misbehaviour of the K2 that it does not revert to the normal resolution settings if you plug the rear cam back in. You have to do it yourself. Otherwise the rear cam will not work.
Plug rear cam in and start K2
Connect to the K2 using the App and set the resolution to your desired value (1080p or 720p).
Exit the settings page to make sure the K2 saved the changes
Shutdown the K2 properly by switching off Ignition or holding the Button on Top for some seconds
On next start, the rear cam will work and the resolution settings in the App will show your selected resolution.

You can use a http command to check the current resolution settings.
The command http://192.168.1.254/?custom=1&cmd=3014 will show you a list of all current settings.
Check the 2002 parameter.

Status 13 => 1080P for both cams
Status 14 => 720P for both cams
Status 5 => 1080P for front cam, 848x480 for rear cam.
With the rear cam removed, my K2 (V57 firmware) defaults to Status 5 and (obviously) only records the front cam.
