Try switching the phone to airplane mode first and while connected to the device. The button seems to override auto on/off. It does need to be powered up normally either by the power converter or USB to a computer.
I'm trying to test the K2 for the first time, prior to installation on the bike. I've powered up the K2, connected both cameras and the GPS receiver, and all indicator lights on the K2 control unit indicate that it is up and running. Unfortunately, when I search for the Innov WiFi network from my iPhone, I'm unable to find it.
I've also tried searching for Innov networks from my Laptop, and the laptop also fails to see the Innov WiFi network. And so, it looks like this unit is defective, but I thought I'd check to see if this is a common problems, and considering the number of posts in this forum that are related to WiFi, it seems like this is a common problem.
Does anyone have any constructive advice on how to solve this, or do I need to initiate an RMA return?
How did you powered the K2 during your tests? By connecting it to your PC via USB or by using the power converter? If powered by USB, the K2 maybe switched to USB Mode, where Wifi is not enabled.
One thing you could try is re-flashing the firmware. Just to make sure that all settings are on the correct default values.
I have powered the unit by using a USB cable, into the USB port on the control unit. So, if the unit has put itself in USB mode, it's certainly not indicated by looking at the lights. Do you know how to tell if I'm in USB mode? Any idea why the WiFi indicator is flashing? Does it flash when in USB mode?
If you can see the K2 as an usb storage on your pc, you are in usb mode.
>Any idea why the WiFi indicator is flashing? Does it flash when in USB mode?
Yes, it does. The only indication that you may be in usb mode is the green led. In usb mode, it is constantly on. But that is also the case when recording is stopped, so it is no 100% indicator.
To make sure the K2 does not accidentally switch to usb mode, you can use, for example, a spartphone charger to power the K2. Any charger with 1A or above should work.
I was able to get the unit to work by powering it up from a USB charger, rather than powering it up from my PC. The next problem was that, with a 256 GB SD card installed, the app couldn't really establish a solid WiFi connection, although the WiFi SSID was broadcasting fine, and my iPhone connected just fine.
So, I've taken the information you've provided, and written two more posts, which are relevant, and which should make it easier for others to solve this simple problem.

Tried it, got connected, still does nothing to automate the connection and most of the time it cannot even see the Innovv wifi. Will keep at it.

Well done.
