Is there any documentation on how the different settings impact on video?
Things like Bitrate, Distortion Correction, EIS stabilisation, Video Marker, etc
It would be nice to have something to reference how these settings will impact the video shot, so you can make setting changes to suit the type of video you want to shoot.

Google is your friend on such queries. I figured out what most of those settings do pertaining to the videos.
There is no official document which explains each setting. Maybe because the name of some options is quite obvious. Things like Wifi Name, Video Resolution, Video File Length and all the stuff about the TF Card. For all the others, here is a short description
Bitrate
The higher the bitrate, the more details can be encoded into the video, but the bigger the resulting video files. If the bitrate is too low for the current recorded scene, the encoder has to drop some details to stay within the set bitrate. Dropping details would result in compression artifacts.
Loop Recording
When loop recording is enabled, the H5 will overwrite the oldest video when the sd card is full. If it is disabled and the card is full, recording will simply stop.
Slow Motion Recording
This option requires that the video resolution is set to a resolution with 60fps. When Slow Motion Recording is enabled, the H5 will record at 60 fps, but will encode the resulting video at 30fps. So the resulting video runs half the speed => Slow Motion
Fast Motion Video
This option lets the H5 skip every x frame while recording. If it is set to 2, the H5 will skip every second frame. With the resolution set to something with 30fps, it will in fact record at only 15fps. But the resulting video will have 30fps and therefore runs twice the speed.
Image Inversion
Simply mirrors the image horizontally. Don't know when this might be needfull.
Video Marker
Currently it only adds the "INNOVV" text in the left bottom of the video. Maybe the text will be editable in a later firmware version. Don't know.
Date Stamp
As the name says, it lets you choose whether you want Date/Time displayed at the bottom of the video or not.
Vibration Switch
Enables/disables the vibration feedback of the H5 for several functions like On/off or Take Photo.
Distortion Correction
To archive a viewing angle of 120°, the lens of the H5 is in fact a fisheye and the resulting video is rounded at its sides. The Distortion Correction negates this, so the resulting video looks plane and like what we would expect to see.
EIS Stabilization
EIS means "Electronic Image Stabilization". The H5 uses its internal Gyro and some algorithms to eleminate shaking in the video. Even on a smooth road, there are always little bumps and the head is in constant movement, so the resulting videos always look nervous. With EIS enabled, the video looks very smooth. As a drawback, turning the head looks a little bit robotic in the video, because it always takes some miliseconds till the EIS recognizes the movement as an intended movement.
Special Effects
Lets you record the video with some effects enabled. For example in b/w or in negative colors.
Light Source Frequency
Lets you tell the H5 the frequency of the artificial light to avoid flickering. When both the light source and the camera sensor work at the same frequency, you will see flickering.
In my eyes this has no use when using the H5 at daylight.
Metering Mode
Unlucky translation. Correct would be "Exposure Metering". It lets you choose between three different modes of how the H5 sets the correct exposure. I am not a photographer, so please read here for more infos about the three options.
White Balance
Lets you set the what type of light source you are currently recording under. Like daylight, cloudy, lightbulb, etc. If the results with this set to "auto" does not look like you want, you can adjust it by setting the correct light source.
Exposure compensation
As the name says this option lets you increase/decrease the exposure the H5 uses. If the videos are all too bright, you could adjust the exposre here to darken them.
Time Calibration
The H5 sychronizes its clock with the one from the smartphone. That the way to set the clock of the H5.
